Citrus Roasted Root Veggies!

Hey all!

I have this wonderful recipe for you, to hopefully inspire Spring-like thoughts and thus… Spring-like weather all around! I have been roasting my root veggies this winter as they are comforting and delicious, however I want something to reflect the freshness in the air. I’ve mixed my fave veggies and fruit… and here is what I came up with!


1 Orange – sliced, and use the ends to sprinkle some fresh juice all over the veggies
1 Beet – chopped
1 Red Skinned Potato – chopped
1 Zucchini – chopped
3 cloves of garlic – left whole or roughly chopped
1 Carrot – sliced into wedges
1/2 Butternut Squash – diced
2 tbsp melted coconut oil
(optional) – 1 tbsp honey
Salt and Pepper

In a large bowl, chop, slice or dice all of the veggies, mix well with oil, S&P and any herbs you like (rosemary would be yummy here!) and place orange slices on top and put into the oven at 400F for around 30 minutes.

Et Voila! A new spin on the old go-to dish.
