Maple Cinnamon Chia Pudding Parfait

This beautiful day has inspired me to create a beautiful Chia Pudding Parfait while using some of my most favourite ingredients – Maple syrup, Cinnamon, Chia seeds, oats, Coconut Yogurt – fondly known in my household as COYO, and of course FRUIT!

This has been my go-to mid-morning snack at work, as it carries me through to my late afternoon lunch.

INGREDIENTS:

COYO – or your preference of yogurt
Maple Syrup
Cinnamon
Chia & coconut milk (the pudding)
Oats – or kamut, spelt, quinoa flakes
Fresh fruit

HOW TO:
*Mix 3 tbsp chia seeds with 1/2 cup coconut milk (either from a can or the lighter versions in cartons found next to your almond and soy milks) and refrigerate for 1 hour, stirring mixture a few times.
*Next is the FUN part! Layer all of the ingredients in a jar and VOiLA! Delicious chia pudding parfait.

This can be made the night before or even the morning of (once chia pudding is ready to go) and if made ahead of time, ensures that the oats will have had time to soften.

SO delicious, nutritious and full of flavour 🙂
And also so easily transportable! LOVE THIS!
