Happy New Year Everyone!
It has been a while. I have been sick over the holidays and am JUST starting to feel better now.
It was a doozy, which is why I haven’t posted for a while.
I hope you all had a wonderful holiday and brought in the New Year with VIGOR!
Now, on to my latest creation 😉
Chewy chocolate chip cookies!!
They are everything you could ask for in a cookie:
*A healthy alternative
*Refined sugar free (except the chips)
* and DELICIOUS!
* small banana – mashed
* 1 cup almond meal
* 1/4 cup unsweetened almond milk
* 2 tbsp melted coconut oil
* 1 tsp vanilla extract
* pinch salt
* 1 tbsp coconut palm sugar
*1/4 tsp baking powder
* 1/4 cup combined vegan dark and white chocolate chips
* 1/4 cup oats
* 1 tsp ea. chia & hemp seeds
In a bowl, mix everything thoroughly and let sit for a few minutes so the baking powder can do its thang.
Bake at 325F for 15 minutes on a lined baking sheet.
They bake to perfection and taste amazing.
What a great way to start the New Year.
