Chewy Chocolate Chip Cookies

Happy New Year Everyone!

It has been a while. I have been sick over the holidays and am JUST starting to feel better now.
It was a doozy, which is why I haven’t posted for a while.

I hope you all had a wonderful holiday and brought in the New Year with VIGOR!

Now, on to my latest creation 😉

Chewy chocolate chip cookies!!
They are everything you could ask for in a cookie:
*A healthy alternative
*Refined sugar free (except the chips)
*Dairy free
*Gluten free

* small banana – mashed
* 1 cup almond meal
* 1/4 cup unsweetened almond milk
* 2 tbsp melted coconut oil
* 1 tsp vanilla extract
* pinch salt
* 1 tbsp coconut palm sugar
*1/4 tsp baking powder
* 1/4 cup combined vegan dark and white chocolate chips
* 1/4 cup oats
* 1 tsp ea. chia & hemp seeds

In a bowl, mix everything thoroughly and let sit for a few minutes so the baking powder can do its thang.
Bake at 325F for 15 minutes on a lined baking sheet.
They bake to perfection and taste amazing.

  1. Happy New Year! Glad to see you back and feeling better 😀 Those cookies sound yummy & healthy. I may take you up on it and make them now. I have all this leftover almond meal from making almond milk! Hmmm

    • Thank you! I am amazed every day at how easy it is to eat healthy food. Everything can be simple as long as you keep it simple! Some days I go off on a tangent and serve my whole pantry and fridge on a plate, but often enough, it’s the most simple foods that are the most delicious and rewarding. Enjoy if you try them out! 🙂
