Peppermint White Chocolate Cups!

Tis the season!!

Everything smells like candy canes! Candles, lip balm, lattes, and of course TEA!
I cannot get enough.

I tried my hand at white chocolate a few weeks ago, and was not so successful. I think it had to do with the fact that I was trying to make it ‘healthy’. I made powdered coconut sugar (my take on reg. icing sugar) and made my own cashew nut butter to add to this wonderful recipe, as she did, but it didn’t turn out so well. Today I tried it with the ingredients that she had insisted on using, minus the cashew butter, and it turned out GREAT! I have calmed my cravings… for today, anyway!

Here are the ingredients I used

This is what I had on hand, I will try to pick up organic ingredients next time, and will try again to make a healthier version of these yummy cups!

* 1/4 cup cocoa butter
* 1/4 cup icing sugar – more or less
* 1/2 tsp Tahitian vanilla extract – this type is so luxurious, the vanilla flavour is floral and buttery!
* 1 tbsp. soy milk powder
* pinch of salt
* 1/8 tsp peppermint extract – careful with this, it is powerful and you can always add more if you need more minty flavour!

This makes about 4 white chocolate cups:
** In a double boiler, add cocoa butter and let melt into liquid.
** Take off heat and add soy milk powder, icing sugar, vanilla and salt and stir very well so all is thoroughly combined.
** Add peppermint and stir. It will thicken a bit at this point.
** Before it solidifies, pour mixture evenly into 4 paper/silicone muffin cups and place in the fridge for quick setting action!

TA DA!!! The easiest holiday chocolates you could make with your eyes closed! Although, I wouldn’t recommend doing that 😉

If you want to make a big batch of this VEGAN white chocolate, you could fill up a muffin cup so you have ONE GIANT CHOCOLATE CUP or put the mixture into a square brownie baking tin, let chocolate set, and cut into square chocolate chunks and use it organically…

*** grate chocolate on top of desserts, lattes, waffles (this is a no-brainer!)
*** chop it up to make organically shaped white chocolate chips!
*** break off a piece and put in your morning coffee for a morning treat!
*** add to granola or trail mix!

I mean, when can you NOT use a little white chocolate in your life!?
