I LOVE tacos!
It’s Tuesday. I’ve got Tempeh. Let’s make Tacos!
So listen, I’ve been craving some of my ‘old faves’ lately. And one of my favourite things to do is try to mimic the yummy flaves I am used to, but by using healthy and TOTALLY satisfying alternatives – using cashews for creamy, cheesy things, and legumes/tofu/tempeh as a bland base to soak up familiar meat-like flavours. Now, I don’t normally use soy based foods… I’m not the biggest soy fan, but today it just sort of worked – the texture was AWESOME!
Okay, I should also let you in on a little secret… I EVEN MADE THE TORTILLAS! :D!
This was one of the easiest things I’ve ever made. Water + flour = Tortilla LOVE
Here are the deets:
* 2 cups MASA Harina flour w/ lime
* 1.5 cups water
–> mix this up with a wooden spoon, it should not be sticky (or stick to your hands) but be very soft and make a smooth ball, think PlayDoh consistency. Play/kneed dough for 10 seconds or so to incorporate the two ingredients.
–> this is the fun part – roll into a 2 inch ball and put between two pieces of waxed paper. Use rolling pin to roll thin, or tortilla press, or the bottom of a pyrex dish? (lol) then peel from waxed paper and place on a skillet/pan at med/high heat. It will puff up a bit, flip it, and overall takes about 5 minutes for finished product.
Congrats! You’ve made corn tortillas! SO EASY!
Next we make zee filling:
* 1/2 cup small cubed tempeh
* 3 sml plum tomatoes – chopped
* 1/2 med yellow onion – chopped finely
* 1 green onion – chopped
* 2 tbsp grapeseed oil – or whatever oil you like
* 1 tbsp ea. ground cumin & chili powder
* 1 tsp garlic powder
* sprinkling of chili flakes, S & P, sugar
* 1/2 cup water
* 1 tbsp Worcestershire sauce
–> sauté all of these babies in a skillet/pan until sizzling and heated through. The smell will totally entice you to taste test… you should oblige to this instinct 😉 Set aside and prep the remaining toppings.

* more cilantro
* lime wedge for juicing
* hot sauce
