So, it officially feels like fall!! NOOOOOOOOOOO!!!
I still long for those hot sun filled days that I ended up working through this whole summer.
At least I have my food to turn too. Ha, ha. No wait, I’m being serious.
In true fall fashion, it is a bit chilly today and I am in need of something comforting and sweet.
So here is what I whipped up in mere seconds. It takes longer to gather the ingredients than it does to make these satisfying chocolate balls of goodness.
Yea, I said it. … CHOCOLATE!
Here are the deets:
* 1 tsp organic raw coconut palm sugar
* 1 tsp grated coconut
* 1 tsp cocoa powder
* 1 tsp maca powder (that’s the TWIST!)
* 1 tbsp coconut butter
* 1 tbsp almond milk
* 1.5 tbsp natural peanut butter
* 1/4 cup puffed quinoa
* small handful or sprinkling of goji berries
* Grab a large bowl and mix everything together with a wooden spoon. You want the mixture to be somewhat solid when formed into a ball.
** If you find it is too thick or thin, add a bit more quinoa or almond milk accordingly.
*** Et, voila! You have a healthy, ‘sweet enough snack’ that is filled with protein and will help you avoid that self serve frozen yogurt store around the corner.

Goji Berries: a.k.a snowberries or wolfberries, they contain protein, vit C, iron, calcium and are anti-inflammatory. Seriously, how cool is that?!
